Ingredients:
1 cup quinoa
1/2 cup black beans
1 cup diced tomatoes
1/4 cup diced red onion
1/2 cup diced bell pepper
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh cilantro
Instructions:
In a medium saucepan, bring 1 1/2 cups of water to a boil. Add the quinoa, reduce the heat to low, and simmer for 15 minutes. Meanwhile, in a large skillet, heat the olive oil over medium-high heat. Add the onion and bell pepper and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute. Add the black beans, tomatoes, cumin, chili powder, paprika, salt, and pepper.
